Update README.md to remove beta warning

This is wayyyyy outdated.

Also tweaked a couple other sections.

I removed the section on code coverage since this doesn't feel like it belongs in a top-level readme. Probably only a handful of people actually care about generating coverage reports. It could perhaps be documented elsewhere.
